My husband loves this simple gluten-free quick bread. It became his favorite because it is a little tart and not overly sweet. The hint of orange really compliments the cranberries. Gluten-free cranberry bread has become a Thanksgiving tradition in our family. I serve it for breakfast alongside an omelet or scrambled eggs.
This bread freezes well so stash some extra loaves in the freezer so you can enjoy this delicious bread throughout the winter. You can use fresh or frozen cranberries. I like to pick up several bags of fresh cranberries (especially when they are on sale) to freeze. Imagine sitting down on a chilly morning to warm, thick slices of gluten-free cranberry bread, with a hint of orange, and slathered with butter. Yummy!!!! What a delicious way to start your day!

Incredibly moist and full of zip, you won’t believe this quick bread is gluten-free! Serve it warm out of the oven with butter for a delicious breakfast on a chilly morning.
- Preheat oven to 350° F. Grease bottom of large loaf pan, (9x5x3 inches).
- Sift together flour, baking powder, baking soda and salt in a medium bowl.
- Mix together sugar and butter in a large bowl. Stir in sifted dry ingredients. Mixture will be crumbly. Stir in eggs, orange juice and orange peel until just moistened. Gently stir in cranberries and spread into prepared loaf pan.
- Bake until toothpick inserted in the center comes out clean, about 50 to 65 minutes. Remove from oven and cool 5 minutes. Invert pan on cooling rack, allowing bread to completely cool.
Buy extra bags of cranberries when they are on sale and pop them in freezer. It’s so convenient to have them on hand.
Freeze orange peels in baggies. They are so easy to grate when you have a recipe calling for grated orange peel.
